I don't post recipes on here very often, so this is a rare foodie post from me. I saw this recipe on The Londoner and knew I had to make it as soon as possible. I had all the ingredients at home, but had to find some avocados on the way home from work - I was a woman on a mission!
This is an amazing, quick, healthy meal - and it tastes so good! Sorry about the phone pictures, I wanted to make and eat this immediately so obviously fetching my camera and SD card was too much of a set back.
You will need:
- enough pasta for two people (I don't know how much that is, I guess and usually get it wrong).
- 2 avocados
- the juice of half a large lemon
- 1 clove of garlic
- 2 tablespoons olive oil
- a big handful of fresh basil (or use a big teaspoon of pesto)
- salt & pepper
Put your pasta of choice on to cook - I used twirly, spiral pasta (technical term).
Roughly chop the avocados and, with the lemon juice, garlic, olive oil and salt & pepper, add to a blender and blend until smooth. (I used a hand-held blender).
Once your pasta is cooked, drain and stir the avocado paste through. The heat of the pasta warms the avocado.
And taadaaaa, eat :)
I've got some leftovers ready in the fridge for work and I am so excited! (By the time you read this I will have eaten said leftovers and I will be very happy).
